Summer Fresh Tomato Salsa

Homemade salsa is an all time favorite, and it's super simple to make. Even better, it's loaded with nutrients and fiber, and is very low in calories. Enjoy!

Summer Fresh Tomato Salsa
Prep Time: 5 min
Total Time: 5 min
Serves 4-6

Ingredients:
  • 6 - 8 Roma tomatoes, washed and cut in half
  • 1 small or 1/2 large onion (white, yellow, green or red - we usually use yellow), quartered
  • 1 handful (2-3 tbsp) fresh cilantro leaves, rinsed and dried
  • 1 small clove garlic
  • 1/2 chopped and seeded jalapeno
  • 2 tbsp fresh lime juice
  • 1tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Recipe:
Pulse all ingredients except tomatoes in a food processor until finely chopped and combined, add tomatoes and pulse until the desired texture is achieved. Add more or less of each ingredient depending on specific tastes.

Serve with organic tortilla chips, pita chips or veggies, or use as a garnish on your favorite Mexican dishes.

Tips:
  • Substitute the Roma tomatoes for a 28oz can of organic, no salt-added tomatoes (drain the liquid off before adding to the food processor).
  • Add more jalapeno for heat, or remove it all together for a very mild version.
  • Add a few leaves of fresh or a few pinches of dried oregano to vary the flavor.
  • Mix 1 tbsp of this salsa with 1 chopped avocado for a quick guacamole - delicious!
