Quinoa Taco Salad

Ingredients:
For the dressing (4 servings)
- 1 tbsp olive oil
- 1 tbsp lime juice - fresh if possible
- Pinch of sea salt
- Pinch of cumin
- 1 cup lettuce per person (hearts of romaine are more traditional but any mixed greens will work)
- Black Bean & Quinoa Salad
- 1 avocado per 4 people
- 1 cup cherry tomatoes, halved
- 1 cup crushed tortilla chips per 4 people
- Prepare the Black Bean & Quinoa Salad.
- Wash the lettuce if needed and chop into bite-sized pieces.
- Divide the lettuce onto individual plates for each person and top with 1 cup of the Black Bean & Quinoa Salad
- The dressing is optional - the black bean & quinoa salad is already dressed. Add the dressing depending on how you like the texture of your salad, we do this about half the time we make it.
- For the dressing, combine all ingredients in a small bowl and whisk together.
- Garnish with sliced avocado, tomatoes and crushed tortilla chips.
