Quinoa Taco Salad


This Taco Salad is so yummy it's hard to believe it's vegan!  We use the Black Bean & Quinoa Salad as the "meat" for this dish - it's full of protein, good carbs, good fat and fiber from the beans and quinoa.


Quinoa Taco Salad
Prep Time: 15 min
Total Time: 15 min
Serves 6-8

Ingredients:
For the dressing  (4 servings)
  • 1 tbsp olive oil
  • 1 tbsp lime juice - fresh if possible
  • Pinch of sea salt
  • Pinch of cumin
For the salad
  • 1 cup lettuce per person (hearts of romaine are more traditional but any mixed greens will work)
  • Black Bean & Quinoa Salad
  • 1 avocado per 4 people
  • 1 cup cherry tomatoes, halved
  • 1 cup crushed tortilla chips per 4 people
Recipe:
  1. Prepare the Black Bean & Quinoa Salad.
  2. Wash the lettuce if needed and chop into bite-sized pieces.  
  3. Divide the lettuce onto individual plates for each person and top with 1 cup of the Black Bean & Quinoa Salad
  4. The dressing is optional - the black bean & quinoa salad is already dressed. Add the dressing depending on how you like the texture of your salad, we do this about half the time we make it.
  5. For the dressing, combine all ingredients in a small bowl and whisk together. 
  6. Garnish with sliced avocado, tomatoes and crushed tortilla chips.
