Rosemary Sweet Potato Fries


This baked version of the sweet potato fry tastes so good and is so good for you - it's almost too good to be true! Sweet potatoes and yams are similar in taste but are actually two completely different vegetables. Both are low-glycemic and full of vitamins and minerals, this recipe can be used for both. Sweet potatoes contain almost twice the recommended daily allowance (RDA) of vitamin A, 42% of the RDA for vitamin C, and four times the RDA for beta carotene.

This recipe makes an excellent side dish or just a yummy snack.

Rosemary Sweet Potato Fries
Prep Time: 10 min
Total Time: 40 min
Serves 4-6

Ingredients:
  • 4 Medium Sweet Potatoes
  • 4 Tsp Olive Oil (3 tsp = 1 tbsp)
  • 3-4 Tsp Fresh Rosemary, finely chopped
  • 2 Tsp Sea Salt
  • 1 Tsp Black Pepper
Recipe:
  1. Preheat oven to 425 degrees F. Spray a non-stick baking sheet with a natural cooking spray, such as Spectrum Olive Oil Cooking Spray, and set aside. Spray the non-stick sheet even though we are using oil and a non-stick surface, these fries really like to stick!
  2. Peel sweet potatoes and cut into 1/2-inch thick fries, similar to steak fries. Make them all roughly the same size, this will make sure they all have the same cooking time and none of them burn.
  3. Place sweet potatoes in a large mixing bowl, add oil, salt, pepper and rosemary. Toss well to coat.
  4. Spread sweet potatoes in a single layer on baking sheet.  Bake for 30 to 35 minutes, turning once to ensure even cooking, until golden brown.
  5. If needed, turn your broiler on for 2 minutes at the end to cooking if the fries have not browned enough to crisp up the sides.  This will depend on your oven and the sweet potatoes you use :-)
Best served warm or hot!
